TASTING NOTES
This spicy wine shows wonderful aromas of raspberries, plums and blackcurrant leaves.  A delicate and perfumed wine with ample juice on the mid-palate and with great length.

Altitude: 260m Distance from sea: Approximately 25km
Soil Type: Alluvial  Rootstock: R99
Age of vines: 13 years  Trellising: Vertical hedge

THE HARVEST
Picking date: March 2019
Yield: 7 tons/ha average


ANALYSIS
Alcohol:  13.92 %  |  Acid: 5.6g/l  |  Residual Sugar: 1.48 g/l |  pH: 3.52


IN THE CELLAR
Fermentation Temp: 28-30ºC
Yeast: Bordeaux Red
Fermentation took place in stainless tanks. Duration of fermentation was 8 days. It was pumped over twice a day for optimum colour and tannin extraction. When fermented dry it was pressed into French oak barrels.

Malolactic fermentation: Barrel Wood ageing: 12 months in French oak,
1/3 in second fill, 1/3 in third fill and 1/3 in fourth fill
Bottled:  June 2020


AGING SUGGESTIONS
3-7 years.
