This spicy wine shows wonderful aromas of raspberries, plums and blackcurrant leaves.  A delicate and perfumed wine with ample juice on the midpalate and with great length.

THE HARVEST
Picking date: March 2018
Yield: 7 tons/ha average


ANALYSIS
Alcohol:  14.67 %; RS:  1.48; TA: 5.6g/L; pH: 3.52


IN THE CELLAR
Fermentation Temp: 28-30ºC
Yeast: Bordeaux Red
Fermentation took place in stainless tanks. Duration of fermentation was 8 days. It was pumped over twice a day for optimum colour and tannin extraction. When fermented dry it was pressed into French oak barrels.

Malolactic fermentation: Barrel
Wood aging: 12 months in French oak,
1/3 in second fill, 1/3 in third fill and 1/3 in fourth fill
Bottled:  March 2019


AGING SUGGESTIONS
3 – 7 years.


FOOD SUGGESTIONS
This is an excellent partner with most meat dishes, especially game.
