This full-bodied Cabernet Sauvignon shows aromas and flavours of black cherries, plum and spice. There is also a hint of cedar and cigar box. The structure is firm and the finish long and rich with a touch or sweet fruit.

Situation: Selected Stellenbosch Vineyards.
Picking Date: March – April 2016.
Yield: 7 – 8 tons/ha average.
Alcohol: 14.31 %; RS: 2.6; TA: 5.1 g/L; pH: 3.76.
IN THE CELLAR
Fermentation Temp: 28-30 °C.
Yeast: Bordeaux Red.
Fermentation took place in stainless tanks. Duration of fermentation was 8 days.
It was pumped over twice a day for optimum colour and tannin extraction.
When fermented dry it was pressed into French oak barrels.
3 – 7 years.
This is an excellent partner with most meat dishes, especially game.
